Vanilla Cupcakes with Berry Compote Filling and Cream Cheese Frosting

Every cupcake makes you a day younger…right?

I don’t know about cupcakes making you younger but cupcakes with a berry filling are definitely a healthy option. Trust me.  Oh and cream cheese.  Cream cheese frosting is a healthy dose of calcium.  Good for the bones.  Fruit and calcium sounds to me like a very well balanced meal.

One of my cats seemed to fall for this healthy logic because it appears that he licked one of these bad boys bald.

I started off by making the berry compote with blackberries, raspberries, and blueberries.  To my surprise, I had a frozen bag of those exact berries.  Coincidence, I think not.  This compote can be made with any berries of your liking…or any berries you happen to have frozen in your freezer.

I mixed three cups of the berry mixture and 1/2 cup sugar in a small pot over medium high heat.

Continue stirring until the sugar has melted and the mixture begins to boil.

IMG_1835 Once boiling, bring down the heat and allow mixture to cool.  I put mine in the fridge for about ten minutes.

While the mixture is cooling, prepare your cupcakes.  I chose to make regular vanilla cupcakes.  You can choose any recipe you like.  Heck you could even make chocolate cupcakes.  Once I cooled my standard batch of vanilla cupcakes, I scooped out tiny dents from the top of the cupcakes.

Once the cupcakes and the berry compote have cooled, carefully scoop the mixture into the center of the cupcakes.

IMG_1844Now unless you are a professional cupcake decorator which I am obviously not, it will get a little bit messy.  The berry compote might bleed into the rest of the cupcake (see messiness below) but nobody will notice once you frost them.

IMG_1847I know cream cheese frosting recipes can be highly competitive but I simply used 8oz of cream cheese, 1 stick of butter, 1 tsp vanilla, and 1 1/2 cups of powdered sugar.  Now would have been a fabulous moment for me to document this process but I appeared to have had a momentary lapse in judgement.  Essentially you throw those ingredients into a bowl and mix them up. VOILA frosting.   Delicious frosting might I add…

Ingredients:

1 batch cupcakes

Berry Compote

1 cup blackberries

1 cup blueberries

1 cup raspberries

1/2 cup sugar

Cream Cheese Frosting

1 8oz package of cream cheese

1 tsp vanilla extract

2 cups powdered sugar

1 stick of unsalted butter
