Quite possibly the easiest recipe that produces the most delicious treat. I am seriously obsessed. I’ll eat these for breakfast, lunch, and dinner.
1 3/4 sticks of butter
1-1/2 cup All-purpose Flour
1-1/2 cup Oats (quick Or Regular)
1 cup Packed Brown Sugar
1 teaspoon Baking Powder
1/4 teaspoon Salt
1 jar 12oz Jams or preserve (flavor is up to you, I used strawberry)
Preheat the oven to 350 degrees and grease a 9×13 in baking dish. Mix together the flour, oats, baking powder, brown sugar, and salt in a large bowl. Work in with your hands or a pastry cutter 1 inch pieces of the chilled butter. If you don’t want to work hard you can let it soften a bit before you begin kneading. Once the butter is worked in and the mixture resembles coarse crumbs, place half of it into the baking dish. Press in the mixture so it covers the entire dish. Carefully spread the jam smoothing it over with a knife until it covers all of the bottom layer. Layer the rest of the oat mixture over the top. Bake in the oven for 35 to 40 minutes. Let it cool for an hour before you cut into bars.
