Balsamic and Goat Cheese Marinated Mushrooms

The perfect side to any meal.

1 pound white button mushrooms thinly slice
2 tbs olive oil
2 oz fresh goat cheese
1/4 cup balsamic vinegar
1 tbs red pepper flakes
salt and pepper (to taste)
3 cloves garlic
3 tbsp white wine

Method: Saute mushrooms in a pan with olive oil until soft and brown, about 5-7 minutes. Add garlic and cook for 3 more minutes. Stir in balsamic vinegar, white wine, salt and pepper, and red pepper. Cook for another 3 minutes. Slowly stir in goat cheese until cheese is melted and the sauce thickens. Serve immediately.
