Tis the season to pick apples FA LA LA LA LAAAAA
Tis also the season to bake those apples into cute little muffins that can pass as a dessert or breakfast. Catch my drift?
Ingredients: Recipe adapted from Smitten Kitchen
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup dark brown sugar, packed, divided
1 large egg, lightly beaten
1 cup yogurt
2 large apples cored and peeled.
Preheat the oven to 450 degrees. In a small bowl combine flour, baking soda, baking powder, salt, and cinnamon (set aside). In a large bowl cream butter, granulated sugar, and 1/4 cup of the brown sugar. Beat until light and fluffy. Add eggs and yogurt and beat until smooth. Slowly add the dry mixture into the butter mixture. Fold in the apple chunks. Divide the batter evenly into a muffin tin filling each muffin half way full. Sprinkle the remaining brown sugar over the top. Bake for ten minutes and then turn down the temperature to 400 and bake for 5-10 minutes.
