Lamb has a wonderful flavor on its own and is accentuated and not overpowered by these fresh herbs. This is a must try recipe, definitely great for a crowd!
1/2 cup extra virgin olive oil
salt and pepper
4 garlic cloves, minced
1 4lb butterflied boneless leg of lamb, trimmed of fat
Combine all ingredients in a sealable zip-lock bag. Add the leg of lamb and turn the bag to coat the lamb in the marinade. Marinate in the refrigerator for at least 8 hours. or overnight. Bring lamb to room temperature 1 hour before grilling. Preheat the grill to high heat and place the lamb onto lightly oiled grill rack. Grill covered until meat is desired doneness. Turn sides occasionally and grill for approximately 15 minutes depending on thickness.
