This recipe is cheesy, spicy and amazing. Instead of baking in the oven, I just microwaved the potatoes for about ten minutes. Of course, the potatoes can be made ahead of time or you can even use frozen hash browns.
2 tbs butter
2 poblano chiles diced
2 jalapeños diced
1 red bell pepper diced
2 onions diced
5 potatoes, peeled, cooked and chopped into pieces
salt and pepper
2 cups Monterey jack cheese shredded
2 cups cheddar cheese shredded
8 slices chopped and cooked bacon
Preheat oven to 375 degrees. Saute onions, chiles, and jalapeños in a large skillet with butter. When onions are translucent, add bell peppers and chopped potatoes. Add salt and pepper and cook for five minutes until peppers are soft. Place the potato mixture into a large baking pan. Sprinkle on cheeses and bacon onto the mixture. Bake in oven for 30 minutes.
