Oven Roasted Potatoes

Ingredients: 

1 pound potatoes (I used red)

Old Bay Seasoning

Rosemary

Salt and Pepper

Pancetta 

Thyme 

Cook pancetta in 1/2 tablespoon olive oil in a heated pan.  Cut potatoes into quarter slices and place in a large bowl. Pour the pancetta olive oil mixture over the potatoes.  Sprinkle the potatoes with old bay, rosemary, thyme, and salt and pepper.  Bake in oven at 400 degrees for 45 minutes.
